Roasted Almond and Apricot Yoghurt

There is something so satisfying about starting the day with yoghurt. You can experiment and find a yoghurt that works for you, but we love the thick texture of a good Greek yoghurt. Even more so when it comes topped with energy-packed oats, juicy apricots, seeds and roasted almonds.


300ml of low-fat greek yoghurt
80g of oats
40g seeds (any will do but try chia, flax, pumpkin, sunflower, linseed or sesame)
15g almond flakes
40g of chopped apricots

- heat a non-stick frying pan over a very low heat and add the almond flakes (without any oil) - stirring regularly, cook until the flakes begin to brown - set aside to cool
- spoon the yoghurt into a bowl, top with oats and seeds
- sprinkle the chopped apricots and almond flakes on top to the mixture

Note: try adding fresh fruit, such as grapes, sliced apple or blueberries to vary this recipe
